Onion Bahji inspired Vegetable Bhaji Recipe


Just a very quick post for me to remind myself of these Vegetable Bhaji's I made using some leftover vegetables.

I had half an onion, half a courgette and a carrot to use up and having some gram flour (chickpea flour) in the cupboard I decided to make something inspired by an onion bhaji and see how it turned out.

Measurements are extremely approximate and I just experimented and made it up as I went along!

Ingredients: (makes 4-5 bahjis)
half an onion
half a large courgette
1 carrot
Ground Tumeric - half a tsp
Ground Coriander - 1tsp
Ground Cinnamon - 1 tsp
Cumin seeds (crushed to powder)
Saffron - tiny pinch
Gram flour (very approximately guessing around 150g)
Rapeseed oil for frying
Water

Method:
1. Slice the onion and grate the courgette and carrot.
2. In a bowl mix all the dry ingredients together, then add in the chopped onion, and grated courgette and carrot.
3. Mix in enough water to form a thick paste-like consistency.
4. Heat the oil in a frying pan. Then add spoonfuls of the mixture. You could deep fry these if you have a deep fryer. Cook on each side for 3-4 minutes. You need to cook until they are well browned. The first one we made wasn't cooked fully through and so the flour tasted uncooked - so you need to cook them until they are well browned rather than slightly browned.
5. Drain on kitchen paper.

We ate these as a quick and tasty starter to our meal and it used up those vegetables that would have otherwise been wasted. I'd never made Onion Bahji's before either so I was pleased that my variation on them using veg turned out well!
